Two types of chocolate mousse (dark and milk chocolate), layered with crisp chocolate praline with chocolate sponge, covered in a rich, silky dark chocolate ganache, and decorated with chocolate-filled macarons. For a chocolate lover, this is the closest thing to heaven.
For my mother, the entremet was an exploration in textures and dimensions, and layers. They’re so well defined they look like an apartment building in Singapore. But in a heavenly, food-y way.
